Lago Tacos was a Mexican restaurant located in Lago Vista, Texas which operated from 1999 to 2007. To many, Lago Tacos was regarded as a local favorite to those who lived in the area. They served up fresh homemade tortillas and yummy salsas on a daily basis. 
Lago Tacos also operated a food truck. They would announce the location of where their food truck would be located on Facebook everyday. They catered to all local events local event in the area using their food truck as a means of transportation. Lago Tacos often traveled on a daily basis. The building for Lago Tacos was built in 1999 by Gary Hudson at the address of 6036 La Paloma Lane, in Lago Vista, Texas. 2 storage building were constructed in 2001. Exterior walls of the canopy were built in 2001. 
In 2005, the property was sold to Chelsea L H, Gary Hudson's daughter to entice potential buyers and inquirers. Chelsea's Beergarden was housed in this building for a short while. Angela and Gary Hudson sold the two acre property in 2006 to Lisa Bruce and her boyfriend Marcelo Merlenes. They were in charge of the property all together.
The Hudson's were both annexed into the City of Lago Vista in 2007. Lago Tacos was annexed the same year as well. Lisa Bruce and Marcello Merlenes had illegally opened up and operated an Italian restaurant called Isimo's inside of the Lago Tacos building. However Isimo's was quickly forced to shut down weeks after opening due to red tag violations and selling food without a permit. Marcello Merlenes got cited by the City of Lago Vista for selling food without a permit and lack of food handlers permit.
The property and building was later sold to Sandy Lee in 2010. Sandy Lee sold the property to Taha Custom Homes Inc in 2016 due to her dealing health resulting from cancer. (Ref: http://propaccess.traviscad.org/clientdb/Property.aspx?prop_id=176686)
Taha Custom Homes Inc currently owns the property. The Hudson family retains a 24 feet easement right of way connecting directly from Lohman Ford Road and through the property at 5905 Lohman Ford Road leading to their homestead and commercial property. All thru traffic is residential or business related is currently running daily or weekly deliveries. Today this property remains open by appointment only 512-267-1111.
